Pumpkin Kimchi – October 2020

Each month, The Korean Pantry will feature a new Kimchi, inspired by the seasons and our Chef’s passion for experimenting with textures and flavours.




Autumn is here and with it come …. PUMPKINS !

Hobak Kimchi is a traditional Korean recipe made with pumpkin cut in large cubes. The picture above is from three years ago, in my Dad’s garden. He always grows too many vegs and I turn them into Kimchi! This year again, he grew pumpkins that I was meant to transform for you but with the current situation, I won’t be able to go back to France to pick up the goods.

Fear not, I have another sustainable solution : I’m going to go pick my own pumpkins from my local pick-your-own farm, Hewitts Farm, just 5km from my Kimchi kitchen! They have a vast selection of pumpkin varieties, even the one traditionally used in Korea !!!

Taste profile : the delicious cubes of pumpkin are slightly sweet and somehow reminiscent of persimmon. The lactofermentation gives the tang while the gochugaru, garlic and ginger (our usual suspects) give the characteristic kimchi flavours. I add pumpkin seeds for a nice crunchy note. It’s a winter time favourite and I hope you’ll enjoy it too.

Its sweet spiciness will make it the perfect side to your grilled white meats, but also to very mild main dishes or noodles soup.



Storage : Keep the pouch refrigerated in an upright position or decant in an airtight container. Kimchi will keep for weeks when stored correctly. Usual shelf life is 6 weeks when you order online, to keep an optimum texture.
